Oral History of Cajun Veterans

6/9/2014

Hilton Eymard, the Turst Bed and Breakfast host and innkeeper, is one of many proud Cajun Americans who fought in World War II.  Anyone who has stayed at the Trust Bed and Breakfast knows Hilton can tell a story with the best of the raconteures.  A recent guest of the Trust Bed and Breakfast told a friend of a friend about Hilton, and both his service and the service of his brother-in-law, Levy Guidry, during World War II.  This led to Hilton being invited to tell his stories, along with many of the other Cajuns who served, to an oral history project dedicated to preserving the experience of these brave individuals.  Please join us in congratulating Hilton for being selected to contribute to the oral history project.

Cook off at the Cordon Blue?

6/2/2014

The Trust Bed and Breakfast had two guest from Germany all last week.  During the week, our owner and host Hilton Eymard discussed many things including everyday foods in Germany and from Cajun Country in Louisiana.  The result was a cook off of sorts.  Our German guest asked if they could cook some of their dishes in our kitchen.  Hilton of course said yes being a lover of food.  In return, Hilton showed how to cook some of his favorite Cajun dishes.  While this is not an everyday occurrence, a week long relaxing stay can turn into a Cook Off At The Cordon Blue!
